Tufts Food Research Assistant – Professor Tim Griffin

The Sustainability Council at Tufts, led by Executive Vice President Michael Howard, is formulating vision and strategy focused on effective, impactful goals and strategies leading to a sustainable university that serves current and future students and employees equally while supporting the health and wellbeing of all of humanity and our home planet. This includes the role of Tufts University in global leadership, education, civic engagement, and operations. One of the focal areas is FOOD and its impacts on resource use and many other outcomes – nutrition, health, equity, and others. In order to chart the progress by Tufts on the variety of sustainability outcomes, we need to know where we are now – in other words, what is the baseline for food at Tufts? We are establishing a team of students (both graduate and undergraduate) that can initiate the data collection, analysis and interpretation in this realm. This team would work with Tufts Dining staff, research faculty, and food supply chain actors to collect baseline data. This could include (as examples): the collective environmental impact of food served at Tufts, engagement with local to regional food producers and suppliers, and the linkages that food at Tufts has with campus and off-campus stakeholders, businesses, and customers.

This assessment requires not only perspective of the food system and its many impacts, but collectively requires expertise in topics like Life Cycle Assessment, diets and nutrition, consumer behavior around food choices, and the role of food in university communities.

There is the opportunity for two to four (2-4) students to work on this project during Summer 2022. These will be paid internships. Start-end dates: May 15 – Aug 31
Hours/week: 10-30 (part to full time) – 2 to 4 students as a team
Salary: $15 -25/hr depending on experience and qualifications
Job location: Boston/Medford area – some remote and opportunities for site visits
