Tufts Dining will provide lunch for all registered attendees.

Our luncheon menu will reflect the symposium content by highlighting cuisines and ingredients that connect with our speakers’ work and expertise. We will feature tortilla salad bowls, posole rojo, and a burrito station blending rice from Lotus Foods, produced using agroecological SRI (System of Rice Intensification) methods, with plant-based meats from Hungry Planet. A number of these items will be presented as new menu options by Tufts Dining in the near future.
